Pata Tim is a delicious pork stew with mushroom and bok choy. It has a mild sweet sauce and is perfect when cooked as tender as possible. This dish makes use of pork leg, which is referred to as pata in the Philippines. It can be considered as a Filipino-Chinese dish.
This is my second favorite pata dish next to a crispy pata. I also enjoy having paksiw na pata with warm rice.
How to Cook Pata Tim?
Start by boiling the pork leg for 2 minutes. This will prevent the skin from rapidly shrinking when boiled or pressure cooked later on. You can also bake the pork if a turbo broiler is not available. This step is optional.
I also like to pre-boil the pork leg before formally cooking the dish. This extra step helps remove the scums and impurities from it. A good 15 minutes of boiling should be enough. Discard the water afterward.
It’s time to formally Cook Pata Tim. Combine pork leg, soy sauce, whole peppercorn, cooking wine, and Sesame oil in a cooking pot. Pour enough water and let it boil. Continue boiling the pork leg until it gets very tender. It can take more than 1 hour if boiling using the conventional method. Pressure cooking the pork leg is quicker. You can pressure cook it for 35 to 40 minutes.
Once the pork tenderizes, add a piece of Knorr Pork Cube in order to provide a solid pork flavor to the sauce. Also put-in star anise and Shiitake mushrooms. I am using dried mushrooms that I soaked in water. Boil in a covered pot for 20 minutes. Remember to add more water if needed. I always make sure to retain at least 2 1/2 cups of sauce.
Add the sugar afterward. Start with half of the amount, which is 3 tablespoons. Add more if needed. Lastly, add the bok choy. Cook for 2 minutes before serving.

Tender pork leg stew with mushroom and bok choy.

- 3 lbs pork leg pata
- 1 piece Knorr Pork Cube
- 1 bunch baby bok choy
- 10 pieces Shiitake mushroom
- 6 tablespoons brown sugar
- 1 teaspoon sesame oil
- 6 tablespoons soy sauce
- 1/4 cup cooking wine optional
- 1 tablespoon cornstarch
- 3 pieces star anise
- 2 teaspoon whole peppercorn
- 6 cups of water
- Set a turbo broiler to 350F. Broil pata for 20 minutes.
- Boil water in a cooking pot. Add broiled pata. Boil for 15 minutes. Drain water and then wash the pata with running water.
- In a clean cooking pot, arrange the pata. Pour soy sauce, Sesame oil, cooking wine, and water. Add the whole peppercorn. Boil for 1 to 2 hours or until the pork gets tender. Note: you can use a pressure cooker to tenderize the pork leg quicker.
- Add Knorr Pork Cube, star anise, and Shitake mushroom. Cook for 20 minutes. Note: add more water if needed. Make sure that there are at least 2 ½ cups of sauce in the pot.
- Add sugar. Stir. Pour cornstarch and water mixture. Stir and cook until sauce thickens.
- Add baby bok choy. Cook for 2 minutes.
- Transfer to a serving plate. Serve. Share and enjoy!
